The conversion in one line
One ounce is 28.35 grams, so divide grams by 28.35 to get ounces, or multiply ounces by 28.35 to get grams. One pound is 16 ounces or 453.6 g, and 1,000 g is 2.2 lb. These are avoirdupois ounces, the ones used for food. Troy ounces, used for precious metals, are a different unit.
Round for the kitchen: 28 g per ounce is close enough for a handful of nuts, but for bread dough or macarons use the exact figure. Over 500 g, 28 g per ounce is already 0.22 oz off.

Worked example: 350 g of flour in ounces and pounds
- Ounces: 350 g ÷ 28.35 = 12.35 oz.
- Pounds and ounces: 350 g is 0.772 lb, which is 0 lb 12.35 oz.
- In cups, using 120 g per cup of all-purpose flour: 350 ÷ 120 = 2.92 cups, or 2 ¾ cups + 2 tbsp + 2 tsp.
Using a kitchen scale well
- Tare first. Put the bowl on, press tare, then add ingredient. Tare again between ingredients and add them in turn to a single bowl.
- Match the resolution to the job. A scale reading to 1 g is fine for flour and sugar. For yeast, salt and baking soda in small batches, a 0.1 g scale is worth having. A single gram of salt is a big share of a small recipe.
- Switch units in the scale, not in your head. Most scales toggle between g and oz. Converting in the scale avoids rounding errors.
- Keep it level and away from the edge of the counter. Drafts, tilt, and a low battery all move the reading.
